Chef's Restaurant Barely inaugurated, this magnificent 5* hotel already boasts a solid reputation, thanks to the investment and experience of Mary and Maxime Rousselin, who we know from Pavlov's dog. The splendid chartreuse expresses the essence of Bordeaux houses, with its beautiful stonework and classic style, now redesigned in a refined, chic style. To prolong the pleasures, Rosie Maillard produces local and seasonal cuisine of the highest quality. The menu ranges from €68 to €112, including tomato, shiso tempura, tomato caramel and combawa, patudo tuna with lacquered eggplant and black lemon, ponzu and black curry tuna jus, saddle of rabbit with cherries, cromesquisite confit leg, pommes vitelottes and tarragon jus, or poached rhubarb with old vinegar, creamy cigarette tuile and aniseed sorbet. An interesting wine cellar, with not only Bordeaux wines on offer (domaine Belland, Loïc Mahé, Pibarnon, Brethous, Beauregard, Mouton-Rothschild, Coume del Mas, Yann Chave, Jamet...).
