Gourmet Restaurant After a trip to Japan and a spell as second-in-command to Samuel Albert at Les Petits Près, chef Yuma Nishioka has set up shop just a stone's throw from the Musée Jean Lurçat, offering a table full of surprises with a fine €30 menu. Local products are influenced by Asia, such as oysters in three ways (raw with ponzu and shiso, steamed with spinach and ginger, or fried with tartar sauce), or grilled cod with choudou leaf (an ancient variety of white cabbage), leeks and seasonal mushrooms; subtle flavors are the order of the day, and to top it all off, a two-course dessert of Yuma-style rice pudding: on thin slices of pear, a rice pudding emulsion and sake ice cream, a marvel of lightness; the wines follow the Loire through estates renowned for their modernity. A toque from the start!
