Gourmet Restaurant In a beautiful house just a stone's throw from the heart of Maine, Thony Pohu invites us to discover a cuisine of products intelligently highlighted; goodness and respect for living things are the essential elements of his approach, as much through his wine list, most of which is organic or natural, as through his cuisine; the pak choï cabbage, accompanied by chanterelles, is grilled, but a dashi-style broth makes it a vegetable of choice; the julienne of line on a brunoise of apple and red beet is crisp on the skin, soft on the inside; the icing on the cake is a good cook's dessert: japanese pearls covered with a fine chocolate galette, lemon beads and chestnuts under a hazelnut praline ice cream; this is an eco-responsible chef who shows respect for people and their terroirs, while remaining willing to innovate with his €38 menu.
