Gourmet Restaurant It's a stroll between the southwest and the Mediterranean, where you can discover both regional traditions and the sunnier inspirations of Sandrine Galéa-Caramelli. It's a warm, family atmosphere, a classic place on a cobbled downtown street, combining brick, wrought iron, sober, rather plush furnishings, refined service and a rather bourgeois atmosphere. Local recipes are the centerpieces of the menu, including a fine pressé of foie gras with raspberries, balsamic gel and pistachio crumble, Mont-Royal pigeon in Lombers, orange sauce with cinnamon, star anise, candied ginger and mushroom sorghotto, and a well-made traditional cassoulet with duck confit and Lautrec pink garlic sausage. Gaillac wines are obviously recommended.
