Gourmet Restaurant This is the most beautiful hotel in the city center, a 4* establishment in a house decorated in a neo-classical style, with a touch of contemporary purity. The brasserie's glass-roofed dining room, with its deliberately chic colonnades and moldings, serves the purpose well. The kitchens deliver a well-crafted brasserie plate, a little above the repertoire: a melting beef cheek, pan-fried foie gras, trumpets of death and consommé, a minute-grilled red mullet, fregola sarda paella and salicornia, a pulled-pork-style piece of Tarn pig, bourbon vanilla agata pulp and yogurt. Classic cellar with some great references.
