Gourmet Restaurant South-east of Angers, this former 17th-century hunting lodge is the setting for a contemporary experience, combining sleek, luminous architecture with a triple function as art gallery, restaurant and hotel. Far removed from tradition, new chef Elliott L'Humeau takes advantage of the natural setting and contemporary dimension of the premises to reinvent the product, as in the case of langoustine carpaccio, miso-mango marinade, avocado cream and basmati rice ice cream, salmon au chalumeau, sweet potato-ginger condiment and dashi-kumbawa foam, or low-temperature duck breast, quinoa, candied bell pepper and mint eggplant caviar... Formulas start at €30.
