Gourmet Restaurant Far from the hypercenter of his beginnings, Rémi Fournier has opened a new, intimate table, alone in the kitchen, but still with the same desire to work with the finest produce and treat his friends, whether old friends or just for a night out, to wines that can be chosen from a wall lined with legendary bottles from the Loire Valley. The red tuna tartare is wrapped in a large slice of Japanese radish, a subtle blend of flavors, while the redfish, pearly to the core, is accompanied by roasted white asparagus and carrots, and spinach lightly cooked a la plancha, for a bistro-style cuisine, masterfully cooked and flavored by a chef who doesn't hide his pleasure at being close to his guests.
