Chef's Restaurant Paul Fontvieille enjoys an exceptional setting in the Bishops' Palace at the foot of the Pyrenees. The architectural gem lends its historic stone to a fine bistronomic table, where the chef explores the Pyrenean terroir to imagine a personal and inventive cuisine, without denaturing the product. On the menu at Le carré de Louise: perfect organic hen's egg, piperade and 12-month Cazaux ham; Olivier Campardou's charcoal soba noodles, fromage frais, cold mushroom broth and garden herbs; trout pavé XXL cooked on one side, eggplant caviar and rosemary butter; duck leg confit, ratte potatoes, porcini mushrooms and full-bodied jus; red fruit pavlova.
