Original Restaurant In an enchanting setting overlooking the Loire, this elegant 17th-century mansion invites you to enjoy a timeless experience. With chef Lionel Arnaud, who took over the reins in November 2023, the menu retains its refinement mingled with a hint of the exotic, such as salmon gravlax with fennel and orange, caramelized beet purée and Espelette pepper tuile. The overall style, including service, remains classic "à la française" with the red wine-marinated wild boar pavé, herb crusted, pan-seared quince, grand veneur sauce and vitelotte chips, seasonal vegetables, all accompanied by a 2015 Pauillac. Scheduled to close in January 2025 for 18 months of renovation work, the hotel promises an ambitious renewal, including the merging of the Choiseul and Minimes hotels
