From the outside, the house blends in with the contemporary buildings of this part of the coast. But inside, it's a palace with a superb view of the sea. Here, Éric Canino has instituted a high-level cuisine likely to please the demanding residents, while also catering for an outside clientele. The menu is a consensus-builder, with excellent products and a combination of prestige and regionalism: langoustine and caviar, velvet shellfish with lemon leaf, crabmeat with celery and oxalis, ravioli and favouilles juice, stuffed and grilled capon and octopus with saffron apples and rock soup, Bresse poultry and lobster... A good choice of desserts by an excellent pastry chef, and a comprehensive Discovery Menu for €265.
