Remarkable Restaurant In the narrow streets of Sainte-Maxime town center, one terrace follows another. Among them is a treasure trove hidden close to the covered market: La Badiane. At the helm, Geoffrey Poesson works wonders every day, from Monday to Saturday, with remarkable consistency and precision in the execution of each dish and dessert (the chef is a former pastry chef). The menu is a real eye-opener, and you can feel that you're about to bite into a piece of Provence every time. Here, wild shrimp is accompanied by fennel conchiglioni with shell jus. A creamy beef tartare is paired with lovage. But it's perhaps on the seaside that we'll find the biggest surprises. The sea bream is cooked on its skin and accompanied by grilled asparagus, while the saint pierre is magnified by a saffron head broth, with a few young fennels for a result close to four toques. The chef also likes to cook rabbit, lamb and even pigeon with unparalleled dexterity (the bird is worked here from neck to giblets). As for desserts, there's plenty to enjoy, with legible, gourmet creations. Rhubarb, apple and buckwheat, and a magnificent chocolate and anise (a generous chocolate finger, as fine as it is delicious). The wine list is full of great escapades, but why not display the selection of wines by the glass? This is a safe and reliable stopover on the Gulf of Saint-Tropez, far from the sirens and fake maps flashing across the street...
