The proud sign of Les Santons is shining brightly now that Julien Allègre, Claude Girard's former second-in-command, has taken up the torch, under the direction of Claude's daughter Stéphanie. The beautiful bourgeois dining room, whose reputation dates back to the 1960s, offers the comfort and refined regional cuisine that regulars have come to expect, with a touch of modernity: loup de ligne marinated in vanilla vine peach and aloe vera, saddle of lamb Rossini-style, red fruit millefeuille, plus whole fish by weight.
