Remarkable Restaurant A short climb up rue Lamarck leads to the reward. L'Arcane and its chef Laurent Magnin offer fresh, gourmet contemporary cuisine with a fine aromatic palette and highly accomplished craftsmanship: after the appetizers, a carrot sorbet spiced up with green cardamom, lovage gel, Bresse cream, crispy celery and smoked trout roe, sets the tone for a brilliant seven-course menu at €145: a gamberoni swaddled in Colonnata bacon that cooks on a hot stone before resting on a cold cream of button mushrooms, raw gamberoni, toasted hazelnuts, ravioli and button mushroom shavings ; an aiguillette de saint-pierre resting on a Thai vegetable broth and yuzu beads, a fresh dish with a hint of acidity, a surprise of heliantis, runny hen's egg, truffle and black Périgord truffle mouillettes, before roast pigeon, marsala sauce, accompanied by a carrot emulsion, crosnes tempura, chanterelles, foie gras and ocas stuffed with shallot confit. Some very fine desserts, including the trompe-l'œil chocolate porcini on sponge cake, parsley sorbet and chocolate crumble. Very friendly and attentive service, a wine list as gourmet as the cuisine, wide-ranging and for all budgets.
