Gourmet Restaurant Israeli chef Ohad Amzallag's Levantine roots are expressed as much in the perfumes of the Middle East as in the maximum use of lacto-fermentation. Natural products, such as homemade garum, highlight traditional methods that facilitate zero waste and anti-waste. This approach is accompanied by a tasting menu that is not neutral in expense, at €107, with the inspirations of the moment: cracker verrine fish broth chantilly fromage blanc olive oil jam, yellowtail almond yogurt apple green tabasco feta champagne butter, pannacotta koji consommé strawberry sorbet white strawberry... An à la carte menu would obviously be welcome in this space reduced to table d'hôtes and tables de deux.
