A graduate of the Ferrandi school and Senderens, Renaud Marcille has the experience and training, which he conscientiously applies to Basque heritage. It's a bistro with the spirit of the country, casualness and conviviality, where you can find familiar tastes in the recipe and the product. The menu is inviting, with fricassee of chipirons with Espelette chilli, cod with chorizo and Christian Parra's black pudding, Espelette-style veal axoa, and a tourtière of apples and prunes glazed with armagnac. The cellar doesn't exclude any region, but we prefer wines from the southwest: irouléguy, madiran, bergerac..
