Chef's Restaurant Sylvestre Wahid at Baumanière, Pierre Gagnaire, Brazil, Japan, Australia, Simon Horwitz can draw on his rich background every day to brilliantly continue the work begun in 2016 in this modern, lively venue. Customers of all ages flock to taste the cuisine of this former Bertrand Grébaut, who works in the spirit of the rue de Charonne master, that of a cool bistro with masterful dishes: a fresh starter with blinis, cucumber, yoghurt, mint, smoked herring and green meat radishes; a tender cod, grilled pak choi cabbage, broccoli, anchovies and lemon; and a pear like a Belle Hélène, creamy miso chocolate and fromage blanc sorbet. A rather curious cellar, with a varied offer by the glass.
