Chef's Restaurant An elegant table where Jean-Luc Paulhan deploys his sure talent, befitting the singular, chic setting of a well-appointed brick house, with its mezzanine and small courtyard terrace. Selected products, noble fish and fine cuts, for a fastidious cuisine that knows how to play with combinations and textures: sweetbreads with chanterelle mushrooms, open raviole of langoustines, back of sea bass with Paimpol cocos and dried tomato gravy, raspberry-black sesame-white chocolate dessert in a fair formula at €59. Well-stocked cellar, well-considered pairings.
