Gourmet Restaurant John Courtis' address has held firm for the past three years, offering Lavaur and Saint-Jean-de-Rives locals a bistronomic table just a few minutes away, with elegant presentation and appreciated technique. The €32 menu demonstrates a fine effort at reinvention, tuna in two ways, sashimi and mi-cuit, iced guacamole and summer freshness, a filet of saithe in a rarebit welsh crust, braised sucrine and veal jus, chicken supreme, broccoli, crushed potatoes with lime, red fruit and tarragon juice, a texture of fennel and raspberry freshness.
