Gourmet Restaurant Guillaume Franco's ultra-contemporary table on the outskirts of Perpignan boasts a beautiful design, with an undulating wooden ceiling, minimalist furniture that seems to reinvent the codes of the bistro (banquettes and small tables) and a beautiful opening to the outside, which lets in all the light it needs. On the plate, an idea of the market with a few fusion trends that go well, and we recommend the €32 menu, with its veal tongue carpaccio, tomato and basil condiments, tempura, its semi-salted hake, tomato and basil bulgur, lemon emulsion, its lamb meatballs, coriander and mint, hummus, yoghurt sauce and tempura, or its soft almond, Roussillon apricots and bourbon vanilla mousse.
