Aftertraining at several outstanding restaurants (notably under Thierry Renou at Le Patio in Arcachon, at the Domaine de la Bretesche in Missillac in the Loire-Atlantique region, and at Les Étangs de Corot in the Yvelines department) and experiencing the splendor of the Palace of Versailles alongside Stéphane Duchiron (as Grand Contrôle), Alexandre Ziane joined Philippe Augé ’s team at the Hostellerie de Levernois in 2024.
A grandmother who passed on her passion for cooking to him
In this beautiful establishment, which has been home to so many great chefs, he recalls cooking very often as a as a child, with his grandmother ( “it may be a cliché, but it was truly through her that I developed a taste for cooking ”) gained the maturity needed to aim higher. “The head chef position at Château Sainte-Sabine, which is owned by the same owners as the Hostellerie de Levernois, was set to become available in late 2025. At 35, the timing seemed ideal for me to take on my first head chef role.”
At this luxurious château-hotel in Burgundy, Alexandre Ziane quickly found his footing, taking over from Thomas Braghi and bringing his own vision of cuisine—both classic and elegant—to the table, relying on exceptional ingredients presented with finesse. A few months after his arrival at Le Lassey, the château’s restaurant—where the former apprentice at Le Richelieu on the Île de Ré now works—earned two toques and its first award.
