Gault&Millau Academy's member Grand Siècle and coups de théâtre... The setting for Alain Ducasse's restaurant at Versailles is nothing short of regal. Commoners and marquises alike can step back in time to savor the charms and splendors of a time when kings had all their wits about them. The experience is therefore complete in these preserved and embellished premises where the great chef, Académicien Gault&Millau, gives his reading of an evening of great prestige, with XVIIIᵉ century crockery and decor, in a unique menu: zucchini and mussels refreshed with caviar, veal pie with basil, blue lobster with smoked eggplant and coraled juices, poularde à l'Aurore with braised Anna apples and lettuce, fruit fountainainebleau in a sequence that won't end without wonderful chocolates from the Ducassian factory. Service obviously dictated by protocol, from a faithful reconstruction adapted to the XXIᵉ century, cellar of great house.
