Philippe Mille has just announced his departure from Domaine Les Crayères in Reims to embark on a new adventure. The chef has a lovely project that he has just unveiled.

The rumor mill had been churning for a few weeks, but now it's official. Philippe Mille, chef at Domaine Les Crayères, is stepping down to open his own restaurant. The Sarthe-born chef, who took up residence in Champagne almost fifteen years ago, is staying in the region and will inaugurate his first address, Arbane, by April 2024.

Arbane, a nod to the name of a grape variety that has become rare in Champagne, will be housed in a two-storey building. It will be a gourmet restaurant with around 30 covers, spread over two areas: the first under a glass roof that lets in plenty of light, and the second facing the open kitchen. It will also be possible to sit out on the terrace in fine weather, or to enjoy an intimate upstairs lounge before or after your meal.

In the kitchen, Philippe Mille will be following the same guidelines as at Parc Les Crayères (4 toques), sublimating the products of the Champagne region, always with rigor and creativity, but also with clean, straightforward tastes on the plate.

Before arriving in the region, the chef had trained in some of France's finest establishments, including L'Aubergade, Drouant, Le Pré Catelan, Lasserre, Le Ritz, Le Scribe and Le Meurice. For the first time at home, the Meilleur Ouvrier de France 2011 will be able to push the envelope even further, to follow his desires to the full, and offer his guests a different take on the region's gastronomic riches.
