In a bid to level the playing field, chef Christophe Moret is undoubtedly the right man for the job. With his steady hand and impeccable technique, Alain Ducasse's former right-hand man, who previously worked at the Shangri-La, has lost none of his mastery, in line with the desire of this prestigious establishment to consolidate its position. Traditional Reims clientele can therefore rely on these guarantees, in a short menu of familiar flavors without a hitch. After the foie gras champignons de Paris, a little less daring than Barbot's in the past, on a high-quality product, the saint-pierre is firm and supple with leek and potato tagliatelle, a shellfish and citron confit marinière, a pigeon cherry turnip beet in the rules of the art. Rosalie Boucher's inspiration for desserts is always excellent, with a magnificent apricot-oat-olive-oil composition and gourmet mignardises (irresistible mendiant chocolate). A large-scale cellar, historically one of the most well-stocked in France, with all the great champagnes, burgundies and clarets, but never forgetting to regenerate over the years with a few fashionable names.
