From vine to plate: Gevrey-Chambertin's gourmet stopover

Sometimes it's a good idea to get away from the freeways and take to the secondary roads. The one that links Dijon to Beaune is an opportunity to discover prestigious vineyards while stopping, for a night or more, in the heart of the Gevrey-Chambertin vineyards.

South of Dijon, on the right-hand side of the D974, the first vineyards come into view. The Marsannay appellation, considered the "golden gateway to the Côte de Nuits", appears first, followed by Fixin, then Gevrey-Chambertin, at the foot of the Combe de Lavaux, one of Burgundy's most remarkable territories, classified as a nature reserve, bordered by rocky ledges. A jewel of biodiversity much appreciated by hikers.

A stopover in the heart of the vineyards

Before embarking on these escapades or exploring the vineyards of Gevrey-Chambertin and its neighbors, a stop at Lucie and Thomas Collomb's Rôtisserie du Chambertin is a must. A beautiful 18th-century building, set in the heart of the village, a stone's throw from the church of Saint-Aignan, destroyed then rebuilt in the 13th century, and surrounded by numerous walled vineyards. Lucie and Thomas Collomb took over this stone-clad establishment in 2014. at the time, it was necessary to rethink and redo part of the architecture of the premises, and then to think about a hotel and culinary offer, which now includes a bistro, a wine bar and a gourmet restaurant. The result is one of the most complete and stylish establishments on this wine route, dubbed the Champs-Elysées of Burgundy.

Since it's not yet time to collect your room keys, why not start by training your taste buds to sample the local wines. At Lucie and Thomas Collomb's, it's possible, without reservation, to be served by the majestic fireplace some home-made cured meats to accompany fine local vintages or those of prestigious neighboring appellations - vougeot, morey-saint-denis, échezeaux or nuits-saint-georges.

With your palate revitalized, it's time to head for one of the 9 rooms in this exceptional setting.choose from the classic "Les Demoiselles", the standard "Les Charmes", "Les Corbeaux", "Les Groseilles", "Les Terres Blanches" and "Aux Beaux Bruns", unless you prefer the superior category with two rooms.category, with two rooms named after famous wine-growing plots: "Les Chaumes" (in Vosne-Romanée) and "Les Amoureuses" (in Chambolle-Musigny). And if you'd like to enjoy a private terrace overlooking the Burgundy vineyards, the "Suite Balcon" completes the offer. No two rooms are alike. Blue tones for the suite, wood and exposed beams for the superior rooms, the warmth of dark red for one of the standard rooms. And all in all, a meticulous decor, modern comforts, an almost unsettling tranquility, a timeless charm.

Feeling hungry? The Bistrot Lucien has what it takes to keep you from going anywhere else. A bright room, a warm atmosphere where many winegrowers like to break bread. Like them, it's a good idea to start with a nice slice of marbled ham to share, before moving on - depending on the changes made to the menu every two weeks - to the traditional oeufs en meurette, while the chef prepares a rack of firm veal.or, if you prefer, you can opt for the indestructible free-range poultry with supreme sauce, oyster mushrooms and gratin dauphinois. A few (obviously Burgundian) cheeses and profiteroles later, it's time to get back on the D974 and drive through the vineyards to Beaune, with a mandatory visit to the Romanée-Conti vineyards and, further south, Pernand-Vergelesses, Ladoix or Savigny-lès-Beaune.

Return to the hotel for dinner at Thomas Collomb's gastronomic table, either under the beams above the kitchen or on the first floor as an extension of it. An advocate of local and organic produce, the chef is keen to showcase the work of neighboring farmers, demonstrating that there's more to life than just vines, and that there's also wild-gathered produce, free-range pork, guinea fowl, freshwater fish and a thousand and one market garden products. Dinner over, the room awaits. But before plunging into the arms of Morpheus, you still have to check off the vineyards you didn't visit on this first day and decide on the next day's itinerary.
