Long confined to Italian grocery stores, panettone now takes pride of place in French bakeries from December onwards. This success story has prompted our craftsmen to offer their own versions of this Milanese festive cake, combining tradition and innovation. Here's a tour of France's best panettones.

Christophe Louie, Paris

for Christmas, baker Christophe Louie, a specialist in natural sourdough panettone in Paris, offers sweet and savory versions of this Italian brioche. On the menu: zaatar and preserved lemon, "cacio e pepe", orange blossom or chocolate gianduja. A "Panettone des Rois" edition combines orange blossom, preserved lemons and strawberries. In collaboration with Petrossian, the artisan also offers an original truffle creation.

At his boulangerie-pâtisserie near Toulouse, chef Yves Jéhanne offers two versions of panettones for winter: the first with candied fruit, citron, lemon, orange and raisins, and the second with chocolate chips and dried fruit.

La Grande Épicerie de Paris has collaborated with the perfume house Fragonard to decorate the collector's tin of its panettone, on the theme of Lapland. inside, a soft brioche with raisins, orange peel and hints of bergamot, reflecting the traditional recipe.

Pierre Hermé, Paris

For the festive season, Pierre Hermé has drawn inspiration from his iconic creations to create his panettones. The four recipes are : Ispahan, with rose, raspberry and lychee; Arya, with pistachio and orange blossom; Infiniment Chocolat, with Grand Cru Araguani cocoa and candied orange; and Infiniment Noisette, with Piedmont hazelnut.

Every year, Ferments Bakery offers 100% sourdough panettones in a variety of recipes. For winter 2025-2026, the bakery has chosen to honor the traditional recipe, with a candied fruit pastry, but also a gourmet chocolate version.
