Matthias Marc opens a new establishment in Doubs
As announced in mid-December, Matthias Marc is embarking on a new adventure after leaving Substance, the 3-toque Parisian restaurant he opened in 2018. To mark the occasion, the chef cycled across France, a journey shared on his Instagram account.
After a stint in several outstanding Parisian and Monegasque establishments, the chef's career took a new turn. He's moving closer to his native Burgundy-Franche-Comté to open a brand new establishment, marked by a personal signature.
An announcement... by bike
To mark this renewal, the chef set himself a challenge: to reach his new establishment by cycling across France, from Paris to the Jura vineyards. For eight days, Matthias Marc and Sylvain Courivaud, ex-chef of Braise and sous-chef of Substance, who is also joining the adventure, shared their journey via Instagram.
Between two-wheeled journeys and meetings with producers, they give the first clues as to what will be the hallmarks of this new place's identity. Matthias Marc evokes a "more personal" cuisine focused on terroir and nature, made entirely over a wood fire, and a "360-degree offer". The site will include a 10-room hotel, a gourmet restaurant and a bistro.
Opening planned for summer 2026
La Maison des Cimes, the new name of the establishment taken over by the chef, is located on the shores of Lac Saint-Point in his native Doubs. He puts his childhood and his roots at the heart of his cooking, having grown up in a family that ran a forestry business. Today, he is leading a personal project that marks a "major step" in his career as a chef.
Matthias Marc is working with interior designer Hanna Marc, chef Sylvain Courivaud and sommelier Eulalie Mariton to bring this project to fruition. The project is due to open in summer 2026.
