A successful autumn rhymes with a new book. In addition to the regional guides published throughout the year, the 109 bookstore release came out at the beginning of September 2023. Here are the promises of this new edition.

"In the Gault&Millau family, I'd like the 109! For the fourth year running, Gault & Millau has published the new blood of French gastronomy: the 109. A new directory of fine addresses freshly (or almost) inaugurated over the past year.

What is the 109 book?

"At Gault&Millau, we're really lucky. Lucky to be able to find 109 new talents without any difficulty," introduces editorial director Stéphane Bréhier on the very first pages. Thanks to the meticulous work of our investigators and their director Marc Esquerré, 109 new restaurants make their debut in Gault&Millau. They represent the new blood of French gastronomy. "Some are reinventing the country inn, others are revitalizing city centers too long neglected, some are shaking up the habits of overindulged Parisians, others are imagining tables for sharing..." reads the back cover.

Book 109 2023

From Alby-sur-Chéran to Vannes, by way of Lille, Paris and Saumur, the new gastronomic scene was visited, rated and the portraits of their solo chefs, sometimes in duo, were drawn up. It's a great opportunity to shine the spotlight on the chefs of today and tomorrow. Those who, at their tables, will have you try out both reassuring and unexpected pairings.

Not just a guide to fine addresses...

If finding 109 chefs who have opened a new restaurant in France in 2023 was a fine challenge, Gault&Millau has taken on an even greater and more delicious one. Each chef's portrait is accompanied by a signature recipe from the establishment. Thought up for four to six people, the key information for taking action is provided: preparation, cooking and resting times. As an added bonus, the level of difficulty is indicated, so that epicurean readers can challenge themselves too.

This fourth edition of the youngest member of the yellow guide family was published on September 7, 2023 in all the best bookshops, and is also available in the e-boutique section of the website.
