Granted, prices have risen with notoriety, but we're delighted with Mallory Gabsi's irresistible rise to prominence in the Parisian - and therefore global - dining scene. The kindly Belgian chef hasn't gained an ounce of smugness: always humble, attentive and devoted to his house, his teams (top-notch as always) and his customers. So, yes, the four-course at €150, the seven-course at €195, you're starting to play hopscotch in the big leagues, but also with the joy of coming across, in this very community atmosphere of an insiders' bistro, langoustine and bergamot, eel always (the Flemish brand!) shallot, brill asparagus and wild garlic and mango for dessert, subtle and inventive with bottarga and ricotta. Mallory cooks her own food, doesn't mind the neighbors, works hard for her house and follows the right path of an exemplary career. Cellar in the same spirit, seeking out good winemakers with heart and talent.
