A fleeting encounter between David Gallienne and Impressionism

To mark the 150th anniversary of Impressionism, chef David Gallienne takes the helm of a new ephemeral table. Make way for gastronomy inspired by master paintings.

For the first two months of summer, David Gallienne is moving his table to the Musée des Impressionismes in Giverny. The chef, who heads the Jardin des Plumes (3 toques), has created a unique menu for the occasion. The Sarthois chef has always had a singular affinity for local produce. As a child, he spent his school vacations between his grandfather's garden and his grandmother's stoves. Over the years, he has become a gastronomic reference in his Eure village. It seems only logical that he should work in collaboration with the village's other pride and joy, the Musée des Impressionismes.

Gastronomic interpretation of Claude Monet's paintings

David Gallienne, a true lover of plants, finds Giverny "a wonderful playground for cooking. For this ephemeral restaurant, the chef had to combine culinary art and Impressionist art. With Claude Monet as his common denominator, he had to create a gastronomic interpretation of the painter's greatest works.

Artists, who are often drawn to the sea, led the owner of Jardin des Plumes to create a menu that calls for travel. A rather coherent proposal when you live in a region with such beautiful seafood. Epicureans who come to enjoy a gastronomic reading of Impressionist art will be able to discover several mouth-watering creations. "L'impression soleil levant" is translated by a tartare of gambero rosso, peas, horseradish, pod broth scented with garden herbs and fresh mint. "La promenade sur la falaise" offers spider crab with cuttlefish tagliatelle followed by combava bisque. Finally, the "marée basse aux petites dalles" is created around sea lettuce, bergamot and black sesame.
