The media executive will succeed Hugo Bourny as head of the institution on Place de la Madeleine, which has been acquired by Lapérouse Holding. He will officially take the helm at Lucas Carton on September 25.
There are restaurants whose very names tell part of the story of Parisian gastronomy. Lucas Carton is one of them. A few months after its acquisition by Lapérouse Holding, the institution on Place de la Madeleine is set to begin a new chapter: starting September 25, 2026, Cyril Lignac will take the reins, thereby adding a new dimension to its presence in the capital.
This development follows Lapérouse Holding’s acquisition of the restaurant last June. Founded by Benjamin Patou and Antoine Arnault, the group—which already owns several iconic Parisian establishments such as Lapérouse, Prunier, and Lafayette’s—had acquired Lucas Carton from the Vranken-Pommery group. This marks a new chapter for this historic restaurant, located on Place de la Madeleine, which is now welcoming a new chef.

To succeedHugo Bourny, who had been running the kitchen since 2021, the group has chosen a chef whose fame extends far beyond the world of fine dining. Cyril Lignac currently heads several Parisian restaurants and simultaneously maintains a significant media presence, spanning television, publishing, and the development of new dining destinations.
His arrival at Lucas Carton thus marks the coming together of an establishment steeped in history and a figure who is particularly well-known on the French culinary scene. The chef is also already familiar with the challenges of Parisian haute cuisine, having previously led the restaurant Le Quinzième, which closed in 2019.
A Busy Start to the Season for Cyril Lignac
This new role is part of a particularly busy start to the season for the chef. Cyril Lignac has just launched a new restaurant specializing in Japanese hand rolls, following the transformation of his restaurant Dragon. He will also be appearing on television and continuing his publishing work with a new volume in his “Fait Maison” collection—a “Best of” compilation featuring 155 recipes—scheduled for release on October 2.
