Remarkable Restaurant The bar is necessarily high for an establishment as legendary as Lucas-Carton. So it's only natural that there should be some tension, both for the customer and the brigade, when the first exchanges take place. Rest assured, all is going well at Place de la Madeleine, and our last visit saw neither shock nor trembling between the wood panelling, large mirrors and thick carpeting. Hugo Bourny's menu doesn't take any major risks, but it's a fine, chiselled work that enhances the value of superb products, while showing a hint of rejuvenation: These include: sea urchin from Brittany au naturel with ice cream, green mikan, kuki hojicha (green tea) and puffed rice; red mullet with smoked tea, trumpet fricassee, sheep's trotters and samphire; 120-day-old poultry from the Perche region, a melt-in-the-mouth supreme with diced Jerusalem artichoke and raisins, Jerusalem artichoke, shiitake and nepita emulsion. A logical and consistent conclusion, with pink Corsican grapefruit in different textures, sage cream, sencha tea ice cream, fine Wayanad black pepper meringue. Good service overall, if a little uneven, sometimes a little disturbed, like the diners, by the continual passage of customers on their way to the bistro, a large cellar, according to the house reputation, with some very great vintages and very expensive wine by the glass.
