Paul Pairet at Hôtel Le Crillon
Unknown to the French public until he joined the Top Chef jury at the end of 2019, Paul Pairet from Perpignan is a real star in Asia, particularly in Shanghai, where his restaurant Ultraviolet offers an unusual, avant-garde experience. The caped chef has just set up shop under the golds of the Crillon (Nonos by Paul Pairet at the Hôtel du Crillon), where he is reviving the old tradition of palace grills. Every seat is taken (the restaurant only opens for dinner), but our investigator has managed to secure a reservation. F. T
