Producer Here, the ducks are selected from committed breeders, according to a very precise quality charter: 13 to 15 weeks of free-range rearing, 12 days minimum of cereal-based force-feeding (no animal meal or GMOs). It's in the preparation of the products that Maison Paris comes into play, reproducing tried-and-tested techniques. Founded in 1907, the company is still family-owned. In the stores at the Bayonne, Biarritz, Dax and Peyrehorade markets, you'll find a range of duck products, as well as Bigorre black pork and Bellota ham.
