Here, the ducks are selected from committed breeders, according to a very precise quality charter: 13 to 15 weeks of free-range rearing, 12 days minimum of cereal-based force-feeding (no animal meal or GMOs). It's in the preparation of the products that Maison Paris comes into play, reproducing tried and tested techniques. Founded in 1907, the company is still family-owned. In the stores at the Bayonne, Biarritz, Dax and Peyrehorade markets, you'll find the full range of duck products, as well as Bigorre black pork and Bellota ham.
