Description

Après trente années passées à vinifier au sein du domaine familial, Christian Gosset a décidé de voler de ses propres ailes. Sur les 5 hectares que comprend son vignoble, 3 hectares sont classés grand cru, majoritairement à Aÿ (90%) et Chouilly. Les cuvées parcellaires millésimées sont vinifiées sous bois. Pour des raisons indépendantes de notre volonté et de celle du domaine, nous n'avons pas pu goûter les champagnes cette année, nous reproduisons les notes de l'an passé.

The nose proudly expresses its terroir, dominated by chalky minerality. The wine is rich, ripe, sapid and salivating on the palate thanks, yet again, to the smooth chalk. The minimal dosage of 1g/l enhances the crystalline texture. An ambassador of the Aÿ terroir to savour by itself.

Made from old vines planted in 1969, this cuvée expresses the quintessence of its chalky origin, with extra soul due to the age of the vines. The terroir of Aÿ dictates the law and erases the notion of grape varieties. This champagne is a source of chalky and salivating youth which lines the palate and quenches our thirst with great happiness. Try with a veal and langoustine tartare, and mayonnaise seasoned with red Kampot pepper.

The nose is initially austere before revealing delicate woody notes. The creamy and gourmet palate balances the power of Pinot Noir and the chalky flavour of the terroir of Aÿ. A vinous champagne for the table, to accompany a beef tenderloin hamburger with a slice of hot foie gras.

This low dosage (1g/l) rosé with a pretty, crushed strawberry robe, offers very fine bubbles. The discreet nose precedes a delicate and vinous palate, with velvety tannins provided by the addition of red wine vinified in barrels. Digestible and refreshing, this aperitif wine can be enjoyed with a salmon gravlax with red beets.

The nose evokes a bush of white flowers. The palate shows a telluric power and citrus flavours (blood orange). The Chardonnay is at the service of the Chouilly terroir to reveal both power and finesse. The finish is long and tasty. This champagne would match well with tartar of scallops with fleur de sel.
