L'avis de Gault&Millau
Sur un peu plus de 6 ha (pinots noir et meunier majoritaires), répartis sur neuf communes, dont trois premiers crus, Yann et Séverine Alexandre, vignerons se revendiquant totalement indépendants, ont fait le choix de vinifications parcellaires afin de préserver le plus longtemps possible les caractéristiques de chaque terroir et de chaque cépage. À la vigne, travail des sols et enherbement font partie du cahier des charges : depuis vingt ans, aucun herbicide n’est utilisé et un tapis végétal est maintenu sur les 27 parcelles. La fermentation alcoolique se fait en fût de chêne, sans fermentation malolactique. Outre les trois cépages champenois majoritaires, le vigneron vinifie deux cépages confidentiels : l’arbane et le petit meslier.
