Beneath its pale color, this blanc de noirs has a very assertive, vegetal and root-like nose (fennel bulb and rhubarb), softened by the presence of quince jelly and sweet spices punctuated by hints of dried rose. The palate is salivating and lively, with racy flavors and fine bitters of lovely length. A cuvée for laying down, to be served with iodized dishes prepared without too much fuss.
