A "historic" disgorged champagne from 2005. The wine spent 15 years on its lees, then 15 years without them, before reaching us today. The color, rather old gold, seems a little more marked than that of its cousin, Le Millésime Brut Nature, recently disgorged. The nose, too, shows a clearer evolution, with scents of lime blossom herbal tea, fine pastry and lots of freshness with a hint of menthol. The palate is greedy, full-bodied and balanced, with distilled sugars at their best. The salted butter caramel finish opens up a host of possibilities for pairing with spices such as curry or turmeric, and noble white fish such as turbot.
