The confrontation of Champagne's two major grape varieties offers a most delicate aromatic mirror for this cork-pressed 2012. Kidney apple, bitter orange and persimmon mingle masterfully with toasty, spicy dried fruit. Elegant and homogeneous, the palate reveals a suave but chalky chew for this non-dosed wine with notes of candied bitter orange. For dessert, a fine match with an almond blancmange and a strawberry tartar with mint.
