This blanc de noirs, from a Premier Cru parcel in Cumières, reveals a crystal-clear color with sustained effervescence. The nose reveals fragrances of ripe Pinot Noir: baked apple, brioche, buttered pineapple, sweet almond. The rich, mineral palate offers multiple pleasures right through to the creamy, dried-fruit finish. Food pairing: pork belly confit, chard declension, mustard seed jus.
