When you arrive at the estate, the first thing that strikes you are the bottles of wine from every region, in every color, that are everywhere: on the table, the chairs, the shelves. Olivier is passionate about his work. Fifteen years ago, he took over plots in the Petits and Grands Morin terroirs, located a few kilometers southwest of the Côte des Blancs. The chalk here is older than that of the illustrious neighboring terroir. From these terroirs, the domaine produces only parcel-based cuvées, with a pragmatic approach to viticulture: some practices are based on organic farming, others are reasoned according to the needs of the plant and the climate. What's important is the optimal expression of each plot. A Burgundian approach to terroirs, a Champagne-style approach to blending, with reserve wines over several years. The base vintage and disgorgement date are indicated on the bottle's back label. All wines are vinified and matured in foudres and multi-wine barrels, bottled unfiltered and waited for a long time before disgorging.
