Belgian by birth, architect by training, Maxime Ullens is above all passionate about old stones, the restoration of old buildings and fine wines (he worked for many years representing the wines of a major Rhône Valley house). In 2012, he bought the ruined Château de Marzilly in the Massif de Saint-Thierry, with the aim of completely restoring it. He discovered an AOC parcel there, and surrounded himself with the best biodynamic specialists to help him optimize it, and thus begin a second career at best: that of winemaker. Now that the vines are bearing their first fruit, Maxime makes his wines with great precision, finesse and determination.
