With 9 years on the lees, this cuvée takes us by surprise. With abundant foam and lively bubbles behind a golden, slightly old gold color, it's already well evolved and backed by a patina of slightly oxidative notes. On the nose, humus mingles with dry hay and smoked pork rind, with hints of potpourri and candied orange. The palate is quite delicate, with a jumble of stone fruits and dried flowers, sustained by freshness and bitter length. May need cellaring for a few more years. An audacious pairing: oven-roasted black pork loin in hay, with dried roses.
