After a good opening, the nose reveals brioche, toast and almond notes, then ventures into undergrowth and aromatic herbs. The attack is smooth, brioche-like, greedy and rich, before invigorating the tender palate. The bubbles are discreet and the finish offers sweet Christmas spices, candied lemon, a touch of nutty butter and lovely tropical fruit. The bitters are not outdone, and the hint of zest adds pep. A champagne pâtissier with a gastronomic profile that goes well with creamy poultry.
