The nose of this rosé opens happily with complex notes of intense burlat cherry, fresh yeast, fine pepper, toffee apple and fresh bacon. On the palate, the wine is full-bodied and rich, with fine, subtle, fresh bubbles. Intense flavors of macerated fruit do nothing to mask round, sapid acidity. The bitter, fruity finish is perfect for a pokeball of marinated tuna with soy sauce, pomegranate, basil and blood orange. A great success.

Piollot Père et Fils

This 19th-century Aube family estate is located in Polisot, on the Côte des Bar. Roland Piollot took over the estate in 1986 and began working the soil. After obtaining organic farming certification in 2014, the 8.5 ha of vines were recently certified biodynamic. Proud of his heritage - half the vines are over 50 years old - the winemaker produces a majority of pinot noir, but also rarer varieties such as arbane and pinot blanc. In addition to his classic cuvées de réserve and rosés, the domaine offers single-vineyard champagnes with assertive character. His daughter Jeanne, the sixth generation, is in charge of the estate's communications.
