Ultra-fine bubbles precede a fine, dense nose with notes of lime blossom and yellow fruit (mirabelle plum). On the palate, the chalky, mineral wine is airy, highly digestible and appetizing, punctuated by notes of herbal infusions. It would be interesting to share this bottle as an aperitif with a chalky cheese such as fougerus (a type of coulommiers), not too matured and tasted without the rind.
