Beautiful champagne. The nose opens with notes of fresh chalk, citron, williams pear and fresh cookie. On the palate, the wine is smooth and fleshy, with a complex finish of breadcrumbs, chalk and lime. Open with a wasabi herring terrine.

This 19th-century Aube family estate is located in Polisot, on the Côte des Bar. Roland Piollot took over the estate in 1986 and began working the soil. After obtaining organic farming certification in 2014, the 8.5 ha of vines were recently certified biodynamic. Proud of his heritage - half the vines are over 50 years old - the winemaker produces a majority of pinot noir, but also rarer varieties such as arbane and pinot blanc. In addition to his classic cuvées de réserve and rosés, the domaine offers single-vineyard champagnes with assertive character. His daughter Jeanne, the sixth generation, is in charge of the estate's communications.
