Pierre Baillette
This harvesting and handling operation is located in Trois-Puits, just south of Reims. This 3.3-hectare family estate is managed by 4th-generation Périne Chartogne Baillette, who owns plots in Trois-Puits and Rilly-la-Montagne in the Premier Cru appellation. The vines have been free of chemical weedkillers since 2007, and some are worked with horses. Vinification takes place in vats or barrels, always using indigenous yeasts, and the cuvées all reveal freshness and genuine authenticity.
