The wine's deep gold color reflects prolonged cellar aging. The very fine bubbles confirm this. The foam is creamy and the bubbles persist on the side of the glass. The wine has a mature structure with notes of brioche, honey, stewed fruit and roasted coffee. The attack is supple, with more obvious fruitiness, with apple, hazelnut and mousseron on the slightly evolved side. This champagne is ideal with white meat or seafood in sauce, such as scallops in saffron sauce.
