The pale color of this cuvée doesn't reveal the 8 years spent on laths! The foam is creamy when served, and the nose reveals mature notes of toasted brioche, honey flowers and very ripe, stewed orchard fruit. The attack on the palate is rather supple and long, with already evolving notes surrounded by aromas of lightly caramelized baked apples, small wild mushrooms and dried citrus peel. Already perfect to drink, this champagne will match the texture of a caramelized veal sweetbread, served with potatoes sautéed with root vegetables.
