The color is amber with slightly greenish golden hues. The wine is fat and oily in appearance. The nose offers a palette of stewed and candied fruits (peach, pear, lemon). Notes of vanilla and pepper open up a more powerful dimension with aeration. The champagne marc is not completely melted into the wine. Sweet, mellow and honeyed on the attack, the wine becomes drier on the finish, with flavors of fruit paste and quince jelly. Drink chilled as an aperitif or with desserts such as mirabelle plum tart.
